Almond Crusted Honey Butter Salmon & Vegetables, Air Fryer Edition

The only things ruling me out of being pescatarian is the fact that I eat chicken and turkey. I LOVE seafood. My favorites are salmon and shellfish. To avoid extra bread and carbohydrates (diabetes runs strong on both sides of my family), I like to use crushed almonds and other nuts as an alternative. The following recipe is my own scratch version of Almond Crusted Honey Butter Salmon.

Allergic to seafood or not into the taste?
Replace the salmon filet with a 5-7oz chicken breast and set air fryer to 375 degrees for 7-10 minutes, or until the breast reaches an internal temperature of 165 degrees Fahrenheit.

Ingredients

  • 5-7oz Salmon Filet
  • 1 Cup Almonds
    (raw or roasted)
  • Raw Vegetables of Choice
    (I used pepper, onion slices and a medium potato)
  • 2 TBS Organic Honey
    (or substitute honey)
  • 1 TBS Unsalted Butter
  • Garlic (fresh or granulated)
  • Onion (fresh or granulated)
  • Black or White Pepper
    (I use both)
  • One Small Lemon or Lime
  • Cooking Oil
    (I use avocado oil)

Meat Prep

Each part of the process is quick and simple.

Take 5-7oz fillet and place it on a perforated piece of foil.
(I poke holes with a safety pin; Holes necessary for proper ventilation, but foil is necessary to separate the veggies from the filet)

Take half of your lemon (or lime) and squeeze the juice over your filet.
(Use a sieve to filter out pulp and seeds; I keep the pulp and add it)

Add seasoning to your lemon dressed filet – garlic, onion, and black and white pepper.
(You may add more, but this combination mixes beautifully with the butter and garlic)

Set your filet aside and let it soak up the juices!

Melt butter in a microwave safe dish and stir the honey into your melted butter.

Pull your filet back in front of you and drizzle that honey-butter mixture all over it. Be sure to get both sides!

Take one cup of raw or roasted almonds and crush them.
(I put them in a zip-up bag and whack them with a meat mallet)

Cover your seasoned and drizzled fish filet with your almond bits. You can either dump them on or dip the filet in like shake and bake.

Your almond crusted filet is ready. Set it in the air fryer basket, leaving enough space for the side of veggies.

Veggie Prep

Slice your veggies how you like and place them on another perforated piece of foil.
(I place them in a mixing bowl first; I like to make sure the seasoning and lemon juice spreads)

Squeeze the other half of your lemon or lime onto your veggies.
(This isn’t necessary, but adds a nice twang; It won’t be overkill, as the lemon/lime flavor in the filet will mostly cook out)

pour 1-2 TSP of cooking oil onto your veggies.

Add desired seasoning to your veggies.
(There is no guideline with this one; use your favorite seasoning for veggies)

Mix everything together, assuring you have drenched and covered your veggies in flavor.

To Cook

For this recipe, we will be skipping the normal “fish” setting and cook time. This style and combo require a slightly longer cook time and higher cook temperature.

Place your veggie foil next to the filet in the air fryer pan.

Set the air fryer to 350 degrees for 15 minutes.
