Breakfast or Dinner Burritos, Tacos, or Quesadillas – Made with Boiled Eggs

My family and I love taco night. I try to do a taco night every week to every other week. The only thing that sucks about having so many taco nights is having the stomach issues that I do. If I am in the mood for beef, I must use MINIMAL seasoning. I just can’t have my cake and eat it too. Thanks to gastritis and IBS, I often substitute the beef and pork portions of every recipe I make, while letting my family enjoy the beef and pork.

Because of my stomach issues, I keep extra veggies, chicken, turkey, eggs, and seafood on deck! I create my own version of what the family is having, so that we can still sit and enjoy our food together. The following recipe is fantastic way to enjoy taco night and ensure a good protein source, while giving your gut a break.

Trust the process; it’s a delicious and fun way to turn eggs into taco meat!

Ingredients

  • 1-2 Eggs (Raw or Pre-Boiled)
  • 1/2 TSP Ground Cumin
  • 1/2 TSP Chili Powder
  • 1/4-1/2 TSP Paprika
  • Heaping 1/2 TSP Granulated or Powdered Garlic
  • Heaping 1/2 TSP Granulated or Powdered Onion
  • 2 TSP Salsa
  • 2 TSP Sour Cream
  • 1-2 TSP Taco Sauce (optional)
  • Tortilla (corn or flour) or Hard Shells
  • Toppings – However you like to dress your taco!

The Eggs – Preparation & Seasoning

To boil your eggs…

Fill a small to medium pot halfway with water and bring to a boil.

Gently drop eggs into the boiling water and allow to boil for 6-10 minutes.
The yolk can be soft or hard boiled, but not runny. It needs to be easily separated from the egg whites, aka our “meat.

Making the taco seasoning

SEPARATE the yolk from the egg white and put the yolk a small to medium bowl/mixing bowl.

Add the taco sauce, salsa, sour cream, ground cumin, paprika, chili powder, garlic powder, and onion powder to your yolk. Stir and blend it all thoroughly (I whip it together with a fork).
This dry seasoning combo is the base of my signature taco seasoning pack.

The final look will resemble refried beans. This is due to our blend of seasonings and salsa mixing with the lighter colored sour cream and yolk. Trust the process and give it a taste!
You can also use this seasoning pack on ground beef, chicken, or turkey.

Optional – To make it even better, toss in some cilantro, scallions, and/or corn.

Putting Everything Together

Cut the hollowed-out egg whites into small squares (or close enough to it).

Add the cut egg whites into your sauce (egg yolk mixed with seasonings) and blend it all together.

Disclaimer: Due to my daughter asking politely for one of my hollowed-out egg whites, my version will display less than normal.

Now that you have seasoned your “meat,” it is ready to go into a taco, burrito, or quesadilla.

Burrito

Lay out your tortilla and add the egg mixture.

Top with desired amount of cheese and other toppings (I love using onion, black olives, cheese, and light lettuce – I leave out the fresh tomato because of my stomach).

Fold your burrito – Fold lengthwise once, then fold both sides in. After folding in both sides, roll the rest of it lengthwise.

Skip the dinner toppings and make it breakfast! Add bacon, potatoes, and other breakfast foods if you’d like to make it a breakfast meal.

Although you can eat it as is, I place the burrito in the oven at 375 degrees for 15 – 20 minutes.

Taco

This process is the easiest and quickest.

Place your seasoned egg whites into your hard or soft shell and add your desired toppings.

Skip the dinner toppings and make it breakfast! Add bacon, potatoes, and other breakfast foods if you’d like to make it a breakfast meal.

I always crisp my taco shells first.
(Microwave for 30 secs, bake at 350 degrees for 5-10 mins, air fry 3-5 mins)

Quesadillas

Lay out a tortilla and layer half of it with the seasoned egg whites.

Add desired toppings.
Skip the dinner toppings and make it breakfast! Add bacon, potatoes, and other breakfast foods if you’d like to make it a breakfast meal.

Fold the empty half of your tortilla over the filled in part and lightly press down.
Your filled tortilla should now be in a half-moon shape.

Coat a frying pan with cooking oil (I use avocado oil) and fry both sides of your quesadilla (about 2-3 minutes per side).
